CornerStone! in Frazee, MN is looking for a motivated, organized and enthusiastic Bistro Manager to join our growing organization! The Bistro Manager is expected to lead and manage the development and operations of the Bistro and Coffee Shop.
This position coordinates activities and directs training of kitchen workers engaged in preparing and cooking foods to ensure an efficient and profitable food service by performing the following duties personally or through subordinates: *Essential Duties and Responsibilities* include the following.
Other duties may be assigned.
_*Development and management of a positive culinary experience: *_ * Plans or participates in planning menus and utilization of food surpluses and leftovers, taking into account probable number of guests, marketing conditions, popularity of various dishes, and keeping the menu updated.
* Reviews menus, analyzes recipes, determines food, labor, and overhead costs, and assigns prices to menu items.
* Creates new, and modifies existing, recipes as needed to maintain the culinary relevance of the operation.
* Directs food apportionment policy to control costs.
* Observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner.
* Tests cooked foods by tasting and smelling them.
* Devises special dishes and develops recipes.
* Organize, conduct and teach food tastings and presentations to create a positive experience.
_*Management of operations and staff:*_ * Maintaining a positive atmosphere and experience for customers * Develop and manage food supply with key vendors and “Farm to Table” concept * Oversee supply management, quality assurance, culinary operations and marketing to support the Bistro and follow all food safety laws and policies * Responsible for development and compliance of food safety policies and procedures * Develop fiscal practices and budgets to support a successful food business * Estimates food consumption and purchases or requisitions foodstuffs and kitchen supplies.
* Supervises cooking and other kitchen personnel and coordinates their assignments to ensure economical and timely food production.
* Lead staff development, management, hiring and scheduling.
* Familiarizes newly hired staff with kitchen practices and oversees training.
* Promote and develop mentorship and experiences for youth to learn culinary arts.
* Explore and develop community relationships to expand services and maximize resources.
* Establishes and enforces nutrition and sanitation standards for restaurant.
*Supervisory Responsibilities* Manages one subordinate supervisor who supervises employees and volunteers in the Bistro and Coffee Shop.
Is responsible for the overall direction, coordination, and evaluation of these units.
Also directly supervises non-supervisory employees.
Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws.
Responsibilities include: * Interviewing, hiring, and training employees * planning, assigning, and directing work * appraising performance; rewarding and disciplining employees * addressing complaints and resolving problems *Qualifications* To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.

*Education and/or Experience* * Associate's degree or equivalent from two-year college or technical school; or six months to one year related experience and/or training; or equivalent combination of education and experience.
* Experience in supply chain, food safety, and quality assurance * Financial management or related experience _*Language Skills*_ Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.
Ability to write routine reports and correspondence.
Ability to speak effectively before groups of customers or employees of organization.
_*Mathematical Skills*_ Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, area, circumference, and volume.
Ability to apply concepts of basic algebra and geometry.
_*Reasoning Ability*_ Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.
Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
